IT STARTED WITH A GIRL WITHOUT HER GARDEN…
Laura Klavitter loves greens. When relocating to her new home in Dubuque, Iowa in 2015, Laura found a city she loved but she missed having her own expansive garden space. One day she made a chance connection with a local chef who had recently started up his own scratch-kitchen restaurant in town — and he was in need of some locally-grown greens for his culinary creations. Laura jumped at the opportunity, and began growing microgreens for Chef Kevin in the windowsill of her home. Laura became passionate about learning all she could about the tiny greens’ uniqueness and character. Thus began MicroGirl. While MicroGirl has since grown to supply dozens of microgreen varieties to several local restaurants for all to enjoy, Laura still strives to keeps things simple — our tiny greens are grown with only seeds, soil, and light.
Stacey Thill lives in downtown Dubuque with her daughter Alice. She discovered her passion for growing microgreens and quickly began working with Laura at MicroGirl, LLC in 2015.
With no prior gardening experience, Stacey now manages the entire microgreens growing operation and is looking forward to making this endeavor a viable career for her future.
